Tôm bóc vỏ, rút chỉ đen trên thân tôm cho sạch, giã thô, ướp vào chén tôm 1/2 muỗng cà phê tiêu, 1/2 muỗng cà phê muối.
Hoà tan 1 muỗng cà phê mắm ruốc vào chén, thêm một ít nước lạnh, hoà cho ruốc tan. Rau quế rửa sạch, cắt nhỏ.
Đun nóng dầu điều, phi hành tím và tỏi băm thơm, cho tôm vào xào chín. Thêm vào khoảng hai tô nước lạnh, đun sôi.
Cho chén nước mắm ruốc đã hoà tan vào nồi canh, đợi sôi lại nêm 1 muỗng canh nước mắm, 1 muỗng cà phê hạt nêm, 1 muỗng cà phê đường. Cuối cùng cho bạc hà vào nồi canh đun sôi khoảng 2 phút thì tắt bết, thêm rau quế cắt nhỏ vào.
